Who doesn’t love pancakes with butter and syrup for breakfast??? This recipe is nice and easy for those of you who like to make breakfast, but are usually still half asleep while doing so.
What you need:
2C flour
2T sugar
4t baking powder
1/4t salt
2C soy milk
2T vegetable oil
Simple as this, throw it all in a bowl and whisk it together. Let it settle for a few seconds before pouring into the pan, but you’re going to want to use either a nonstick pan (really is the best way) or put lots of butter in the pan and let it melt before you put the batter in. You’ll be cooking these over a medium flame, by the way. If you’re using a small pan, just pour the batter in for 1 pancake and cover the pan with a lid. After about 2 minutes, take off the lid and check to see if its ready to flip. If so, flip the pancake over (you should have a nice golden brown side up now) and press it gently with a spatula to flatten it out and let all the air out. Cover again with the lid and let it cook until done. Repeat until you have all the pancakes you need. If you have a big skillet, you can make a few at a time. If you’re *really* skilled, you can even make them heart-shaped!
Serve with tons of butter and syrup. I like fresh blueberries on mine, as well.
