Stuffed Bellpeppers with Spicy Tomato Sauce

Servings: 4
Ingredients:
4 medium tomatoes (or one 16oz can)
1 tbs chili flakes
4 bell peppers any color
1 tbs coconut oil
1 medium shallot, chopped
one small potato, shredded
5 crimini mushroom, chopped
half lemon
3 cloves garlic, crushed
1 cup cooked brown rice

This is my favorite thing to order when I go for Indian food.  They are sinfully delicious and suprisingly easy to make!
What you need:
4 oz  Gram flour (chickpea flour)
2 medium white onions, halfed and thinly sliced

I love mashed potatoes.  I love Indian food.  Why not combine the two and get something really awesome?  I think you’re going to like this!
