Easy Vegan Onion Rings

For all you vegans out there that have the occasional craving for greasy onion rings, look no further – this will be exacty what you’re looking for!

You can make as much as you want, this will be enough batter for a good amount of onion rings – probably about 6-8 white onions, depending on the size.  Peel the onions first and slice off the ends.  You’ll want to slice your onions to make the rings about 1/2 to 3/4 of an inch.  Then just separate them all and toss them into a bowl.

In a seperate bowl, combine the following ingredients to make the batter:

8 oz  Self-raising flour

pinch of salt

1t  Lemon juice (fresh if you have it!)

1/2 pt  Vegan Soy Yogurt (unsweetened plain flavor)

1/2 pt Vegan Soy Milk (unsweetened)

Whisk all that together and set aside.

Now, if you’ve got access to a deep fryer – this would be one of those times you’d want to make use of it, because you will have to use a big skillet and do it over the stove otherwise.  This isn’t really that bad of a method, though because you can see exactly how dark they are getting and it gives you more control.

So – if you’re frying them over the stove, put your skillet over high heat and pour vegetable oil in it until its about 1/2 an inch thick.  Let the oil heat up for about 5 minutes and then try a “test ring” – just dip one of the onion slices into the batter and drop it in the oil to see if it is hot enough.  It shoud start bubbling immediately.  ALso, put a few paper towels down on a baking tray or large platter/plate so that you can transfer the cooked onion rings over to this to let them cool when you pull them out of the hot oil.

Drop some of the onion slices into the batter and coat them entirely.  Then, drop them into the oil and let them cook until golden brown and crispy on one side.  Then, using metal or heat-resistant tongs, flip them over and do the same on the other side.  When you are nice and cooked fully on both sides, you can take them out and let them rest on the paper towels.  This will help soak up some of the excess oil, too!  After that, just season them with some salt and pepper and serve with a dipping sauce of your choice!  We have a fantastic recipe on this site for vegan ranch dressing which goes great with these onion rings!  Enjoy!
